Lunch Ideas for Busy Moms

As a busy mom lunch was one of those things I didn't put much emphasis on and in turn that meant making some unhealthy choices. I've always been a stay at home mom. When my kids were infants and toddlers it was really nice to get out of the house at least once a day. I needed that break during the day! Well what started happening was I'd run an errand or two and then hit the drive through for lunch. And no my kids didn't eat at the drive through, they would eat a healthy lunch at home. For TEN years I ate lunch at McDonald's or Wendy's. It's safe to say I was completely addicted to fast food.

3 years ago we decided to move from NY to Utah. Cue major stress! However, once we got here I knew that I had to stop eating all this fast food. First, I was gaining weight. My metabolism at 37 wasn't quite what it was at 27. Second, it was crazy expensive to hit the drive through every single day. Third, it was a terrible example for my kids! On a side note my kids can't stand McDonald's and Wendy's!

When we moved to Utah I decided to make my health a priority. The first thing I did was join a gym and stopped fast food cold turkey. I managed to lose 35 pounds and keep it off. However, one of my new challenges was to figure out what to eat for lunch that wouldn't cause me to want to revert back to my fast food ways. What to eat for lunch?

  • Mason Jar Salads

These are a favorite lunch of mine! You can come up with any creation you love! Here is a link to my Pinterest board where you can find some inspiration on salads. Also check in your local area. I have a girl that lives near me and her business is making these salads weekly. She has a weekly menu with 4 different choices and then you can order however many salads you need for the day. I'm personally much more apt to make a healthy choice if I open my fridge and see jars of salads all ready to go!

  • Charcuterie Board

I love meat and cheese for lunch! When we went to Cuba last year every single restaurant had a charcuterie board on the menu. That is just a fancy term for a meat and cheese tray. Cut up some of your favorite cheese, mine is Gouda, Cheddar and Colby Jack. At least that is what I usually have on hand. I pretty much love all cheese. For meats I'll do pepperoni, hard salami and Genoa salami. I'll also add in some cashews for a healthy fat.

  • Vegetable with Hummus and Gaucomole

I don't like to cook or to meal prep. Luckily I'm married to someone who does! He's really good about keeping cut up vegetables in our fridge. You'll usually find carrots, cucumbers, celery and peppers in my fridge. Pair this with hummus and guacamole for the added healthy fat and protein and you can feel quite satisfied and full from this meal.

  • Chicken Salad

Utilize leftover chicken and make chicken salad. Skinny taste has an amazing lighter version of chicken salad that is really good. You can eat it by itself if you are on a low carb eating style or you can wrap it in lettuce or a wrap.

  • Brushetta Chicken

This is one of my go to lunches. I love brushetta chicken and this is my favorite recipe! I use leftover chicken and mix it with red onion, olive oil and balsalmic vinegar. It is so good I eat it out of the bowl with a spoon!

  • Fruit and Yogurt Parfait

Many times yogurt is confused as a health food. While it can be a healthy choice you need to read your labels. A lot of yogurt is full of sugar. Choose plain greek yogurt and add your own fruit to it to cut down on your sugar intake. I also like to add some granola for the crunch

  • Unwiches

    I know I've mentioned unwiches before but they need to be mentioned again. Just omit the bread on any of your sandwiches and wrap them in lettuce. My go to is turkey, provolone, mayo and onions wrapped in lettuce. So delicious.

  • Rice and Beans

    On Sunday I'll put 2 cups of brown rice in my rice cooker and then store it in the fridge when it's done cooking. This way I have rice made and ready to go. To reheat it put it in a bowl with a little water and cover with plastic wrap. Cook in the microwave for 1-2 minutes and it's ready to go. I like to add black beans to my rice and any leftover meat we have from dinner the night before.

  • Vegetable Omelet

    You can't go wrong with breakfast for lunch! Make an egg white omelet with your favorite vegetables added to it.

  • Caprese Salad

    I love caprese salad! I'll routinely order this as my meal if we are traveling and eating out a lot!

    Lunch ideas for busy moms

    All in all I am so grateful I kicked my bad habit of eating fast food every day for lunch. I don't eat at McDonald's or Wendy's anymore and I don't miss it at all. Since I have added healthy options to my diet I feel so much better. What are your bad lunch habits that you need to kick?

STEP 1: What is your BAND Size?

Using a tape measure place is directly under your bust. Make sure it is snug and round to the nearest whole number. If it is even add 4 inches. If it's odd add 5 inches. Your band is the sum of those calculations. For example if you measured 34 inches your band size is 38 or if you measured 33 inches your band size is 38.


STEP 2: What is your BUST Size?

Using a tape measure measure around the widest part of your chest (nipple level). Round to the nearest whole number. 

 

STEP 3: What is your CUP Size?

Subtract your band size from your bust size and refer to the chart below. Example 37 inch bust - 34 inch band size = 3 inches. That's a 34C.
